Baked Red Tomatoes

Ingredients:
  • 4 Vintage Ripes
  • 1 cup panko (Japanese bread crumbs)
  • 2 eggs, beaten
  • Salt
  • Pepper
Instructions:
  1. Preheat oven to 375 degrees.
  2. Slice Vintage Ripes horizontally.
  3. Combine panko, salt and pepper in a shallow dish.
  4. Submerge each slice in the egg, then coat with panko.
  5. Add slices to a greased baking sheet and cook for 20 minutes or until golden brown.
